Recipe: Shrimp Tacos with Cilantro Lime Slaw

Ingredients

CILANTRO LIME SAUCE

  • 0.5 dl olive oil
  • 1 dl chopped green onions
  • 1 dl cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • juice of 2 limes
  • 1 dl sour cream or Greek yoghurt

 

SHRIMP TACO SPICE MIX

  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1/4 teaspoon cayenne pepper (if you want it spicy!)
  • 1 teaspoon salt

 

SHRIMP TACOS

  • 0.5 kg large shrimps: peeled, deveined and tails removed
  • 6 dl shredded cabbage (red or green)
  • 8 tortillas (corn or flour)
  • 2 avocados, sliced
  • Lime wedges and cilantro leaves for serving

Instructions

1. SAUCE: Pulse all the sauce ingredients in a food processor or blender until almost smooth.

2. SLAW: Toss most of the sauce with the shredded cabbage. Use the leftover sauce to top the tacos. 

3. SHRIMP: Pat the shrimp dry with paper towels. Toss the shrimps in a bowl with the spice mix. Heat a drissle of oil in a large skillet over medium to high heat (or use a grill or grill pan). Add the shrimp to the skillet and sauté for about 2-3 minutes on each side. 

4. ASSEMBLY: Start with adding a few avocado slices in your tortilla, then slaw, shrimp, some extra sauce, a lime wedge and a couple of cilantro leaves for garnish. Enjoy!
